
After researching popular coffee companies, as well as coffee types and flavor profiles, I decided to buy my first few types of Beans from Onyx Coffee Labs. They are known for their transparency, quality, and consistency. The company also offers box sets which appealed to me because it meant I would be able to try multiple types of coffee beans
This box set offers a great "starter kit" with 4 types of coffee beans that range of light to dark roasts. The set also offers detailed tips and information on how to look for the subtleties of coffees notes.

I have heard great things about these coffee beans. When used to make espresso it make a very classic, traditional espresso due to its dark roast. Because of its dark roast, you do not want to use too high of a water temperature, or else you risk over extracting the coffee and releasing undesirable compounds.

Onyx uses the ethyl Acetate decaffeination process. This solvent, derived from fermented sugar cane, can remove up to 97% of the coffee beans caffeine content. In the future I would like to try decaf beans that use the Swiss Water Process, or the Mountain Water Process. You can read more about decaffeination processes at the link below.
